FSN 512 - Current Food Safety Systems In-depth study of the development of Food Safety Systems such as Good Manufacturing Practices (GMPs), Hazard Analysis Critical Control Points (HACCP), and Food Safety Modernization Act (FSMA; Preventive Controls for Human Food Rule) and their application to the food processing industry. The role of these systems in ensuring a safe food supply at the local, national, and international level. Certifications for HACCP and PCQI (Preventive Controls Qualified Individual) are offered to students taking this class.
